Abstract
The features and problems of sugar industry as a source of waste discharged into the ecosystem of the country. The types and composition of the waste industry from the perspective of potential use as a substrate for microbial conversion to obtain biocompatible with the soil mass. Methodical approaches to their classification by the ability to targeted biotransformation. Offered variants of waste classifications and the analysis of their actual compliance with these characteristics, which showed complex, will not reliably assess the departure of their suitability to the microbial conversion. Represented by the formula of the integral index suitability of waste to the microbial conversion, based on the summation of individual criteria imposed by their weight factor. Calculated by the numerical values set the range of the integral index, and it holds the ranking of waste. In tests on the cultivation of microorganisms on substrates of waste received experimental confirmation of results.

Abstract
The article presents the results of studies on the development of resource-saving technologies enriched dairy beverages with cheese whey. Effective use of secondary dairy raw materials allows to increase the output of dairy products. The tasks of the research were: selection of microorganisms in the composition of the leaven for drinks, selection of breast fundamentals, selection flavorings, particularly mulberry syrup, and a study of its impact on structural-mechanical and organoleptic properties, as well as a study of indicators of quality drinks during storage. Selected polycomponent zakowski containing a certain ratio of propionic acid bacteria, kefir starter culture and, Lactobacillus acidophilus, the modes of fermentation, which provide a high content of probiotic microorganisms. With the purpose of increasing the biological value of drinks by increasing the content of serum proteins, the possibility of use of protein-carbohydrate base (buo), obtained by the method of ultrafiltration cheese whey. To improve organoleptic characteristics and consistency of products, increased activity development starters microflora is considered sharing cheese whey and skim milk. The optimal correlation between serum (buo) and skimmed milk in milk whey basis. With the purpose of enrichment of carbohydrate, vitamin, mineral composition, improve organoleptic and structural-mechanical properties of the possibility of use as filler mulberry syrup and white optimal dose make syrup. Studied the amino acid composition of drinks and quality during storage. The use of whey in the product will allow to raise efficiency of processing of milk at the expense of resource-saving technologies.

Abstract
The article deals with the creation of resource-saving technologies for processing bivalve Far East Region. The optimum parameters of the acid hydrolysis of soft tissues clam anadara Broughton. As hydrolyzing agent used in food citric acid. The dependence of the accumulation of dry matter and total nitrogen in the product of the hydrolyzate of the acid concentration and process duration. It is proved that the dry solids content and total nitrogen depends on the duration of the process, and acid concentration. The mathematical regression equations adequately describe the dependence of the content of dry matter and total nitrogen in the hydrolyzate of the acid concentration and the time of the process. The optimal parameters of the acid hydrolysis: the concentration of the citric acid 12%, the duration of 20 hours of hydrolysis the hydrolyzate obtained from the mantle in considerable amounts anadara contains free amino acids, including taurine, which means the biological activity of the raw material. Development of resource-saving technologies of processing Far East region bivalve anadara Broughton provides an efficient and integrated use of biologically active raw materials of marine origin, which will help solve two problems simultaneously: the creation of waste-free environmentally friendly recycling technologies and increasing the share of high-grade proteins and biologically active substances in the diet of modern man.

Abstract
Using of secondary resources is one of the main task in ensuring the productivity of processing industries. This tendency is especially actual in the industries which is engaged in the processing of agricultural raw materials, as the so-called waste products have a biological origin and can be a raw material for the feed products production, and in some cases for food products. Grape pomace is the main type of waste in the processing of grape. The main problem in the utilization of grape pomace is that they in contact with the field or dumps decompose for a long time, which leads to significant the environmental pollution. Therefore the problem of deep processing of a grape pomace is actual. CO2-extraction is one of perspective ways of deep impact on structure and structure of a grape pomace. The results of scientific studies of the CO2-extracts biochemical composition from various structural parts grape pomace are given in work. Data on indicators of oxidative damage, fatty acid composition, the content of unsaponifiable compounds are represented.

Abstract
The article explores and theoretically substantiates the ways and mechanisms of creation of basic elements of innovative infrastructure of the agroindustrial complex (AIC). It marked features of development of technological parks, where formed the innovative potential of sustainable development of the rural economy. The value of parks in the integration of science, production, authorities in solving problems of introduction of scientific developments. Examines the role of innovation in the effective use of land and other resources in support of various forms of entrepreneurship. The article draws attention to the dependence of innovation activity and quality of agricultural specialists, as a new type of innovative activity (e.g. Rural tourism), generates a multiplier effect in local economic complex drive, point of economic growth. Describes the function of the small innovative enterprises, the role of technological Park, as a key element of innovation infrastructure. Examines the background to the "Agrotechnopark "Perm" and the scientific concept of development, approbation of scientific and methodological approaches to the District agro-industrial forum "Volga field day".

Abstract
Because when they leave the Armed forces of the former soldier faces three major challenges is the problem of social-psychological adaptation, reorientation and retraining for civilian profession and employment, the resolution of these problems has become a priority for the Government when downsizing the army. The paper discusses the Genesis of the concept of "financial-economic mechanism of social protection of the military". Considered components of social protection of servicemen and members of their families, such as legal, socio-economic, moral and psychological. Also consider benefits to servicemen, removed to the reserve such as: benefits in the area of pensions, benefits in the field of labour law, benefits in health care, benefits in the field of housing legislation, incentives for the protection of life, zdorovia and medical care, benefits for dismissal from the military service, concessions on property and taxes, transportation privileges. The article highlights the factors influencing the formation of effective system of professional retraining of servicemen discharged. Also deals with the problems of the system of professional training and retraining of servicemen discharged, the solution of which the authors see in the training of discharged military personnel through the provision of registered public educational certificates. Analyzed a number of regulations designed to implement resolutions of the Government of the Russian Federation. The article presents the list of universities participating in the experiment in Federal districts. Analyzed were performed in the process of implementing the resolution of the Government of the Russian Federation and identified causes, stagnating normal course of the experiment.

Abstract
Regulations 1025/2012, adopted 25.10.2012, aims to improve the legal framework of standardization in the European Economic Area and to stimulate the growth of the company's competitiveness, promoting the free movement of goods and services, interoperability and communication, technological development and innovation. Standards, tend to increase competition, reduce the cost of production and sales, stimulate the development of new and improved products, improve supply conditions allow to maintain and improve the quality and ensure the safety of products and services that benefit consumers. European standardization system is based on the principles of compliance, transparency, openness, consensus, voluntary use, impartiality and effectiveness. The objectives of the adoption of Regulations 1025/2012, was to promote EU policies in solving problems associated with climate change, sustainable use of resources, innovation, demographic aging of the population, consumer protection, safety in the workplace. Regulations consists of seven chapters, thirty articles and three annexes and covers issues relating to the general provisions and definitions, programs, standards development, their preparation, order inquiries, decision-making, publication, refusal to publish or publish with restriction references to the harmonized standard organization of information. Appendix to the standard contain information on the composition of the European Organization for Standardization, identification requirements specifications and itemized table of comparisons of Directive 98/34/EC and Regulations 1025/2012.

Abstract
The article is devoted to topical issues of pest risk analysis in order to achieve food security, biodiversity conservation and trade facilitation. It is emphasized that, in accordance with the principle of harmonization of the World Trade Organization recommends that its members bring national sanitary and phytosanitary standards in line with international standards of the International Agreement on Plant Protection (IPPC). During pest risk analysis (PRA) is initially set, whether the harmful organism, and in the affirmative, estimate the probability of introduction and spread of the organism, as well as the coverage and the amount of the economic consequences. In the event that an unacceptable risk is managed in order to reduce risk to an acceptable level through the development of phytosanitary regulations. PRA is carried out in three stages: the preparatory stage, pest risk assessment, risk management. The result of the use of the methodology is the identification of the PRA and pest risk assessment, as well as the selection of one or more management options through the introduction of phytosanitary measures. As conditions change or new information, these measures can be modified and tightened or, in another case, canceled, being obsolete.

Abstract
In the article "The use of antioxidants to increase the shelf life of canned fish" the authors Semenova EA, Sidorenko YI, Gurieva KB, Gromova VA Antropova LE considered promising direction the food industry - increase the shelf life of canned food through the use of natural antioxidants.
The article presents the results of research quality canned fish exposed to long-term storage. As objects of study explored canned fish with the addition of antioxidants. As antioxidants studied resveratrol, ascorbic acid and Dihydroquercetin.
The data on the change in storage organoleptic and physico - chemical characteristics of canned as containing antioxidants, and without additives.
The study authors concluded that the prospects of using antioxidant compositions for canned fish in order to slow the aging process and the product thereby extending the shelf life.

Abstract
Product containing wheat germ and ascorbic acid was produced by high-temperature short-time extrusion technology. Radioprotective and antistressful properties of extruded product were investigated. Extrudate was used as 5% additive to feed of experimental mices exposed to radiation and stress. It was studied ability of extruded wheat germ with ascorbic acid to prevent radiation-induced and stress-induced lipid peroxidation and DNA degradation in thymus. According to research, irradiation and stress caused increasing of malondialdehyde concentration from 38,6 мicromole to 46,7 micromole and to 47,9 micromole respectively. Mice feeding enriched with extruded wheat germ with ascorbic acid decreased raised concentration of malondialdehyde to normal level. Also studies indicated, that double-helical DNA fragments content kept on more high level for experimental mices with feed allowance enriched by extruded wheat germ with ascorbic acid. Studies have shown that extruded wheat germ with ascorbic acid have antioxidant properties and prevent radiation- and stress-induced lipid peroxidation and DNA degradation in thymus of experimental mices.

Abstract
At the moment the problem of studying the microbial ecology of man extends into the category most relevant and promising. Development and widespread use of probiotics and probiotic products is Microecological basic techniques of maintaining physical and mental health, prolonging life and activity of the elderly and the most important prerequisite for the emergence of a new healthy generation.
In this regard, before the dairy industry in the XXI century is worth promising scientific and technical problem - improving and exit to the next level of production and use of probiotic microorganisms.
Microorganisms belonging to the probiotics, well adapted in the natural environment and produce biologically active substances: vitamins, antibiotics, enzymes and other metabolites. They cover a thin layer of mucosal epithelium displace pathogenic microflora, normalize physiological processes, prevent disorders of the digestive system, which helps to improve digestion and increases the body's resistance.
Propionic acid bacteria and bifidobacteria have a number of positive properties that allow to recommend their widespread use in the manufacture of dairy products. Actual creation is based on the combination of the leaven of propionic acid bacteria and bifidobacteria to produce dairy products with high probiotic properties. The article presents the results of research and cultivation of propionic acid bacteria symbiotic microorganisms ferment based on lactic streptococcus thermophilus, propionic acid bacteria and bifidobacteria in the milk mixture. It should be noted that the new protein milk products contain high amounts of cell cultures of probiotic cfu 107 1 g.
