Summaries: Researched chemical, mineral and fatty acid composition of spread of functional purpose. Experiments were carried out with use of liquid chromatograph HP 3600 MXL (column: Hypesil ODS; 200 2.1 mm 5 micron particle size; Hp-Innowax; 30 m 0.25 m), and a gas chromatograph and "Kapel 105". Expert analysis of the organoleptic characteristics of the spread. According to the study, the correlation coefficient at the beginning of the retention period was W = 0,88. After 10 days got W = 0,89. This indicates a high degree of consistency of expert assessments. Evaluate the safety and usefulness of the product.
