Summaries: Use of the proteolytic enzyme preparation, wich is containing an acid protease, at all stages of the process leads to an increase in the content of amino nitrogen saccharified mash. Summaries: The article describes the effect of peeling rye on microbiological, structural, mechanical and biochemical characteristics of raw materials. Given the procedural scheme for saccharified mash, mechanical and enzymatic method, and the method of "cold mashing". It is shown that the production of wort on a "cold mashing" with the changed process parameters using as raw hulled rye, can achieve, and in some cases exceed the basic quality wort compared with a control sample prepared by mechanical-enzymatic method.

Summaries: The paper presents the studies to determine the mass ratio of individual protein fractions of grain, native afterethyl stillage and centrate stillage based on air-dry basis. In the liquid fraction of afterethyl stillage and native stillage the highest content of alkali-soluble fractions of 60 and 50 %, respectively, in corn - five times less (12.6 %). On the basis of high-quality signs and agro-climatic conditions in corn revealed higher levels of albumin and globulins. Feature of the fractional composition of native afterethyl stillage and stillage centrate is probably determined by the physico-chemical changes occurring with protein substances during saccharification, cooking, fermenting. The total nitrogen content in the salt-soluble, alkali-soluble, alcohol-soluble fractions in corn in 3-7 times less than in the native stillage and centrate. Maximum total nitrogen content in the salt-soluble protein fractions in the native stillage is 35 mg, in centrate - 14 mg. The total nitrogen content in the alkali-soluble protein fractions native stillage and centrate is 37-42 mg, in the alcohol-soluble - 7-14 mg. Identified soluble protein fraction, mass fraction of crude protein and peptides, amino nitrogen and amino acids in the native stillage and centrate of stillage. For the native protein afterethyl stillage characterized by high content of amino acids such as arginine, alanine, glutamic and aspartic acid mass fraction of crude protein in the native afterethyl stillage more than in centrate afterethyl stillage.
