Summaries: A combination of the wholesome qualities of dairy and cereal products allows the composition to receive harmonious and structural properties. Both dairy and cereal products have functional characteristics. On a dairy basis the combined products are extremely wholesome, and give a wide field for further improvement in the technology of their production, structure and characteristics and also range of expansions. In practice, increasing the world distribution is achieved by creating the combined products including meat and dairy and taking into account the functional, nutritious and technological properties of each separate component and the working out of the food vegetable composites whilst at the same time creating a complex mix realising the optimal wholesome technological characteristics.

Summaries: In the article was studied safety of wood leaves and coniferous pectin derived from Scots pine converted in Krasnoyarsk krai. Studies of toxic substances in wood leaves showed that the concentration of toxic elements, pesticides, and radionuclides do not exceed permissible limit, regulated by sanitary norms. This data indicates that this sample of pectin substances in wood leaves of Scots pine corresponds to the safety requirements of the pectin for products for children, diet and mass consumption.

Summaries: It is shown that chemical composition of seaweeds or sea-grasses comprises a basis for selecting a polysaccharide modification method. It is found that monosaccharide composition, angidrogalactose/galactose ratio and cellular tissue content are principal characteristics that determine it's technological performance. Marine plant material has been separated into groups, and computer treatment of the experimental data, including a mathematical modeling of the modification process, for raw materials from different groups has been carried out. To some extent this makes possible to predict the outcome of the processing. The influencies of temperature, duration and modifying reagent concentration on the polysaccharide yield and its properties are studied and optimal parameters of the process are figured out and proved.

Summaries: In report results of comparative research of various vegetables grown up on territory of the Samara area on the maintenance of total of phenolic connections with use of method Folin-Ciocalteu are presented. In samples of vegetable marrows, carrots, a potato, eggplants, turnip, a tomato, yellow, red, green, lilac, white pepper also it is investigated them antioxidant ability with use of free radical DPPH (2,2-diphenyl-1-picrylhydrazyl). On these parameters the strongest and weakest samples of investigated vegetables are revealed.
