Ivanchenko V.I.Trends in the Development of Viticulture in the Crimea

Abstract: The development of grape growing in the Crimea over a period of one hundred years is analyzed. The role of the wine trust "Massandra" in the enhancement of the grape and wine industry is highlighted. A programme aimed at developing horticulture and grape growing was outlined in 1956 and initiated the intensification of the grape and wine complex. By1969, the total grape area increased up to112 thousand hectares, the total grape croppage was 661.6 thousand tons, and the average vineyard productivity was 74.9 quintals per hectare. The key reasons hampering the effective functioning of the grape and wine industry are indicated.

Abstract: Shown the efficient of tannin preparations use, to improve the quality of sparkling wines.
According to the results of the comparative analysis, revealed that tannic herbal drugs have different effects on organoleptic characteristics of the wine.
Established, that their introduction into the lottery mixture improves the organoleptic and physics-chemical parameters, as well as sparkling wines and foam properties, containing CO2.
Analyzed the content of free amino acids, physics-chemical parameters of the draw and a mixture of wine after secondary fermentation under the influence of tannin-containing preparations.
It is shown, that the use of wine for the production of sparkling wines recommended in the analysis of these indicators that determine the sparkling and foaming properties, given the data in the preparation of blends.

Abstract: Investigated the formation of volatile products from the fermentation of worts of pome fruits, stone fruits and berries.
It is shown that regardless of the type of fruit raw materials, the quantities of alcohol yieldand yeast races, major secondary products of fermentation are acetaldehyde, isobutanol and izoamilol.

Given agro biological characteristics and quality indicators of wine described forms. Three forms submitted to the state testing under the names Kurchansky, Dmitry and Vladimir. Featuring increased adaptability, new varieties produce a crop suitable for the production of high quality wines, which makes them promising to update the technical assortment grape in southern Russia.

Abstract: The paper shows the results of studying the effect of four preparations foliar action on yield and quality characteristics of grape Krasnostop Anapskiy.
Studied the effect of these preparations on the quality of the special wine from grape Krasnostop Anapskiy.
Esteblished positive effect of foliar fertilizer action on the sugar content in the juice of the berries, while in the embodiment with use of preparation Potassium humate observed high content of titratable acids.
In embodiments using preparations Fetrilon Combi and Nutrivant noted higher compared to the other options content of phenolics and anthocyanins.

Abstract: Cultivation of vineyards associated with a lot of tillage, thereby changing its physical condition, the looseness of the soil, and at the same time related to water, heat, air.
Temporary positive effect ultimately results in a violation of the structural and water proof soil. The problem of changing physical properties and the development of erosion processes acute for all growers. Change in physical state soil affects its fertility when growing vineyards.
Maintenance of favorable physical conditions in the soil at a certain required level for the grape culture is possible with water proof fine-grained structure.
Our research identified the deterioration of water-physical properties of the soil of vineyards under a system of the type content soil fallow. The advantages of the system biologizing content soil in front of the system according to the type of black couple.
The positive trends in the formation of water proof structure, which reduces the risk of erosion of soil vineyards.

Abstract: The article presents the results of studies of the chemical composition, as well as studied the antioxidant activity of the pulp, skin, seeds of 7 varieties of technical grape harvest 2013 in Samara region. Technical varieties of grapes are different of acidity indicators and sugar content, which determines the type of products produced. They are evaluated on the mechanical properties and chemical composition, which in turn depends on the conditions of cultivation of varieties and its biological features.
One line of research in the modern food chemistry is to obtain extracts with antioxidant activity. Antioxidants - a substance, most of them - vitamins that cleanse the body from damaging molecules, called free radicals.
For the analysis of the chemical composition and determining antioxidant activity were used the following methods of analysis: measurement of the total content of phenolics, the total flavonoid content, the total content of tannins total anthocyanins, measurement of free radical scavenging DPPH (2,2'-diphenyl-1 picrylhydrazyl), ability to capture radicals ABTS (2,2'-azino-bis (3-ethylbenzthiazoline-6-sulfonic acid)), total antioxidant power by the FRAP method (ferric reducing antioxidant power reagent 2,4,6-tripyridyl-s-triazine), antioxidant activity in the model with linoleic acid.

Abstract: Studied the stability of cuttings of grape varieties Agadai, Gyulyabi Rozoviy, Khatmi and Narma, widely represented in plantations of Dagestan, to solutions of NaCl.
The details given in this article, relate only to the most sensitive of the studied varieties. Their attitude to saline soils were analyzed on 12 parameters, characterizing the magnitude of wet and dry biomass of roots and shoots.

Abstract: The quality of the wine is influenced by a grape variety, a soil and a climate. The combination of these factors causes formation of technologically valuable parametres of quality of grapes and, as consequence, defines industrial specialisation of the area of the wine growing. The zone specialisation of vine growing would be necessary considered for rational use of natural resources and formation assortment of grapes in a certain zone. The account of all these factors will provide the production of high-quality wines of different types in each natural-climatic zone. The results of studies of chemical composition and physical and chemical characteristics of red grape varieties released by the National Institute of Vine of Wine "Magarach" and of autochthonous ones grown in different natural-climatic zones of the Crimea are presented in the article.
